Strawberry Jam //
1 1/2-2lbs frozen strawberries
-1 cup sugar or maple syrup
-1 lemon juiced
-2-3 tablespoons or scoops of gelatin (my preference) or cornstarch
Recipe
1. In a medium sized pot, add in your strawberries , lemon juice and sweetener of choice. Stir to combine. Cook to a medium heat for about 5 minutes and keep the lid on. This helps to defrost your frozen strawberries.
2. Once the strawberries are soft and soupy add your cornstarch, gelatine or other thickener. The amount depends on how thick you like your jam.
3. add in your cornstarch or gelatin and stir constantly for a few minutes. Let the jam then sit at a medium low heat for another 5-10 minutes. It may bubble a bit! Feel free to stir.
4. Once the jam has thickened visibly, grab your hand blender start blending or squishing the strawberries. I like a smooth jam with a few chunks here and there. Blend until desired consistency.
5. Remove your jam from heat and let it cool another few minutes before transferring them into jars.
6. I use mason jars to store the jam but any glass container will do.
7. This will keep for about 4 weeks in the fridge in an airtight container or jar if it lasts that long ;)
